Lemon Saison

Description

Plants begin to grow in early spring, peach blossoms are red and plum blossoms are white, and a lot of rain moistens the soil. Spring thunder rolls, and the thunder awakens the dreams of all things dormant in the earth. This is the origin of the solar term "Jingzhe".

"Jingzhe" is classified as Sour Saison (Sour Farmer Beer). It uses lemons from Pingtung and Nantou, Belgian Saison beer yeast and Denon bacteria, and undergoes a complicated double fermentation (simulating a Farmhouse multi-bacterial environment). The front part is lemon. Aroma of dry and passion fruit films, with fruit ester and spice phenolic notes in the middle, and fruity acidity, bitterness and sweetness in the finish, creating a complex and dry flavor picture. The goal is to show the turbulent blooming flowers in early spring after everything has been dormant for the winter, which is the beginning of the breath of life.
